If you have 7 serial ports, you may have several via etpu. We found the etpu uarts interrupt once per byte. That can be a significant demand on the CPU depending on data rates. Yes, that definitely looks like a viable option, thanks. The tradeoff would be less overhead. The file system model simplifies managing the space since I am saving small configuration files in flash and the power failsafe during writes is also a selling point.
